Corn Maiden Foods

Corn Maiden Foods ™ makes authentic Mexican style tamales with the nostalgic flavors of our traditions for the leading Hispanic Supermarket Chains in the U.S., in terms of quality and authenticity.

The tamales are hand-made from scratch, starting with the Nixtamalization of the corn to make the ground-stone masa. The fillings are made in house in small batches. The tamales are lovingly assembled by hand and wrapped in corn husks and parchment paper. They are steam-cooked to perfection and frozen for long-lasting shelf life. Corn Maiden Foods makes Chicken, Pork, Beef, Cheese, Sweet Corn, Blue Corn, Vegetarian, Spinach, Pineapple, and Strawberry tamales.

Human Impact

Because the products are labor-intensive, to maintain the traditional flavor and authenticity of the original recipes, this program employs a great number of people, many of them women, heads of household, and contributes to the local economy through continuous employment.

We employ over 120 people that lovingly make the most authentic tamales in California, in our 28,000 sq foot, USDA inspected plant, in Harbor City CA.

THE PROGRAM

Financial Impact

We have the capacity to design a year-round tamales program for our clients, that adapts to their needs. Our tamales are pre-cooked and frozen, ready to heat and serve. We have programs for large restaurant chains, retail markets, and Supermarket Kitchens.

Our typical clients have experienced a 50% volume growth over the last 3 years, driven by the clients recognition of its quality, consistency and authentic flavor.

Tamales in the kitchen generate margins of over  53% for the retail clients and about 70% for restaurants, with minimal additional labor.

The average retail chain involved in the year-round program, experiences sales of about 100,000 tamales a year PER STORE.

Operation

We give our clients in the Year-round program priority in our production. We have the capacity to produce millions of tamales a month, by hand, and we offer our clients the flexibility to order in advance, and build inventories for the busy seasons, while at the same time we give them the flexibility to change orders quickly, to react to changes in the market, and to react to increases in demand. In 2023 we had a 100% fill rate, and a 98% on-time fill rate, including last minute change orders.

Food Safety

We are a USDA and FDA inspected plant. We have solid HACCP programs, Food Safety Programs, GMP’s, SSOP’s and we are audited annually by our Third Party Auditor, for GMP’s and Food Safety Systems. We welcome large clients to perform their own Food Safety Assessments and audits, and we maintain an open door policiy to our large clients, with an open invitation to visit and inspect our production facilities.  We also count with trained personnel that cares not only about food safety but also about Food Quality and Authenticity.
